Kayumas Situbondo comes from East Java, grown at 1,100–1,300 MASL and processed with a controlled carbonic maceration (CM) approach on mixed varieties S795, USDA762, and Yellow Caturra. The combination of highland climate, classic Javanese cultivars, and CM fermentation gives a cup that feels familiar yet lifted: sweet, fruit‑forward, but still comfortable enough for daily brews.
In the cup, expect cherry and green apple upfront, rounded by almond sweetness and a subtle black tea backbone. As filter it shows a medium body, gentle acidity, and a clean aftertaste that works well for both focused hand brews and easy batch brews at the bar.
